Stir Fry Beef and Soy Noodles

Quick, easy, and loaded with flavour, this stir-fry beef and soy noodle dish is a weeknight hero. With tender beef strips and a savoury soy sauce, it’s a meal the whole family will love.

INGREDIENTS
- 2 tbsp olive oil
- 2 brown onions, finely chopped
- 2 garlic cloves, finely chopped
- 4 spring onions, cut into 3cm pieces
- 2 red capsicums, thinly sliced
- 500g beef mince, dusted in 1 tbsp cornflour (makes it crispy!)
- 600g pre-cooked egg noodles
- 1/4 cup sweet chilli sauce
- 2-3 tbsp dark soy sauce
- 2 tsp sesame seed oil
- 1 tbsp sesame seeds
- Chopped coriander and fresh lime, to serve

METHOD
- In a large non-stick pan or wok, over a medium-to-high heat, place the oil, onion, garlic, spring onions and capsicum. Sauté for 2-3 minutes or until soft and brown.
- Add the beef and fry for 2-3 minutes or until crispy.
- Reduce the heat to low-to-medium.
- Add the pre-cooked noodles, soy, sweet chilli and sesame oil and mix together.
- Season well with salt and pepper to taste.
- Sprinkle over sesame seeds and serve with fresh coriander and lime wedges.
