Leftover Ham Tacos

Give your Christmas ham a bold twist with these quick and easy tacos! Packed with fresh toppings and a hint of spice, they’re perfect for a casual summer lunch or a crowd-pleasing Boxing Day treat.

INGREDIENTS
Ham Filling
- 500g cooked ham, shredded
- 1tbsp brown sugar
- 1tsp ground cumin
- 1tsp ground coriander
- 1tsp smoked coriander
- 1tsp ground garlic
- 1tsp ground onion
Taco Slaw
- 1/2 red cabbage, shredded
- 1 spring onion, thinly sliced
- 1 handful coriander, chopped
- 1tbsp red wine vinegar
- 1tsp olive oil
- Salt & pepper
Avocado Mayo
- 2 avocados, mashed
- 1 lime, juiced
- 1/4 cup mayonnaise
- 10 x small or 8 x medium tortillas
- Fresh coriander, to serve

METHOD
- In a medium mixing bowl place the shredded cabbage, spring onion, coriander, vinegar, oil, salt and pepper, and mix together. Set aside.
- Heat a large nonstick pan over a medium to high heat. Place the cooked shredded ham and sprinkle over the sugar and spices with a drizzle of oil. Brown off till crispy and set aside.
- In a small mixing bowl, place the mashed avocado, lime and mayonnaise. Mix until combined.
- Heat the tortillas in a dry pan, or over a flame, until they puff up and have browned slightly.
- Assemble the taco with the mayonnaise, cabbage slaw and ham. Garnish with fresh coriander & serve immediately.
