Harissa Chicken

Ingredients
- 1kg free range whole chicken, brought to room temperature before cooking
- 2 lemons, halved
- 1 handful fresh thyme
- 1 tbsp olive oil
- 2 tbsp harissa paste
- Salt and pepper
Method
- Preheat oven to 200°C fan-forced.
- Place a wire rack into a roasting pan. Place the chicken on the rack and stuff the cavity with the halved lemons and thyme.
- Brush the harissa paste over the entire chicken using a pastry brush (see note).
- Drizzle some olive oil over the chicken, and season with salt and pepper before placing in the oven for 20 minutes to crisp up.
- Lower the oven temperature to 180°C and cook the chicken for a further 50 minutes or until the juices run clear.
- Once cooked, leave to rest for 10 minutes before slicing.
- Enjoy!
Note: do not use your hands to rub the harissa paste over the chicken unless using gloves. The colour of the paste will stain your skin and it is very spicy.
