Harissa Chicken

Serves 4




Ingredients

  • 1kg free range whole chicken, brought to room temperature before cooking
  • 2 lemons, halved
  • 1 handful fresh thyme
  • 1 tbsp olive oil
  • 2 tbsp harissa paste
  • Salt and pepper

Method

  1. Preheat oven to 200°C fan-forced.
  2. Place a wire rack into a roasting pan. Place the chicken on the rack and stuff the cavity with the halved lemons and thyme.
  3. Brush the harissa paste over the entire chicken using a pastry brush (see note).
  4. Drizzle some olive oil over the chicken, and season with salt and pepper before placing in the oven for 20 minutes to crisp up.
  5. Lower the oven temperature to 180°C and cook the chicken for a further 50 minutes or until the juices run clear.
  6. Once cooked, leave to rest for 10 minutes before slicing.
  7. Enjoy!

Note: do not use your hands to rub the harissa paste over the chicken unless using gloves. The colour of the paste will stain your skin and it is very spicy.
